About us

Legacy 593 began with a clear purpose: to develop the potential of our Fine Aroma Cacao. Seeking to bring our production to a broader market, we started transforming it into cacao ingredients that reflect the character and identity of our Ecuadorian origin. Today, we are based in the United States, supplying businesses that work with reliable, origin-focused cacao products.

Did you know..?

The land

Ecuador supplies more than 70% of the world’s Fine Aroma Cacao, and many of its native varieties cannot grow naturally anywhere else on earth. This makes Ecuadorian cacao not only unique, but irreplaceable.

The flavor

More than 80% of a chocolate’s final flavor is created during fermentation. During this stage, natural microorganisms transform the fresh cacao pulp and develop the flavor from the inside out.
Ecuadorian Fine Aroma Cacao is known for its floral, fruity and nutty notes.

The people

Around 95% of Ecuador’s Fine Aroma Cacao producers are smallholder farmers who cultivate 1 to 3 hectare farms, preserving traditions that shape our cacao for generations.
We are part of a small group of Ecuadorian Fine Aroma producers with an extensive planted cacao farm.
